Apple Pie Cookies

Apple Pie meets Cookie and they lived happily ever after!

Apple Pie Cookies

Ingredients:

1 sheet of puff pastry dough

2 small Honeycrisp apples

A squeeze of lemon juice

1/4 cup + 2 tbsp brown sugar

1/2 cup rolled oats

2 tbsp maple syrup

2 tbsp unsalted butter – melted

Cinnamon & Flakey Sea Salt

Directions:

  1. To prepare: Thaw your frozen puff pastry dough until its soft enough to roll out but still really cold. Peel and dice your apples. Preheat oven to 400 degrees F.
  2. In a small bowl add your diced apples with 2 tbsp maple syrup and 2 tbsp brown sugar and a squeeze of lemon. Mix well. Set aside.
  3. In another bowl add 1/2 cup oats, 1/4 cup brown sugar, and 2 tbsp melted butter. Mix well. Set aside.
  4. Roll out your puff pastry and cut circles out using the rim of a glass. Place the puff pastry rounds on a parchment lined baking sheet leaving at least an inch of space in between. Crimp the edges of each round using a fork.
  5. Spoon on a little bit of the apple mixture to the center of each round. Top with a spoonful of the oat mixture. Sprinkle with cinnamon and flakey sea salt.
  6. Bake in the oven for 15 – 20 minutes until the apples are softened, the pastry has puffed, and the oats are golden brown.

Puff pastry makes the world go round I swear. The flakiest crust with absolutely ZERO effort. Plus, most puff pastry is accidentally vegan making this your IDEAL dairy free dessert. You guys know I’m not much of a baker but these cookies, I could make these all day long. I had some extra dough leftover after I was done cutting out my rounds so I just rolled those all together and made one giant cookie/pie and that worked perfectly as well!

I think a few walnuts crushed into that oat topping would be delightful too but I know how some people feel about nuts in their desserts so it’s just a suggestion. You do with it what you will.
