Umami Kale Salad

My new favorite salad of all time!

Umami: Noun

The fifth basic taste—alongside sweet, sour, salty, and bitter—was named umami, meaning “savoriness” in Japanese

Umami Kale Salad

  • Servings: 4

Ingredients:

4 cups kale – shredded

1 cup edamame – shelled

1 cup sugar snap peas – chopped

4 persian cucumbers – diced

1/3 cup red onion – finely diced (green scallions work well too)

1/2 cup lightly salted pistachios – shelled and roughly chopped

1/4 cup feta – crumbled

1/4 cup fresh mint – chiffonade

UmamiDressing:

1 tbsp toasted sesame oil

2 – 3 tbsp lemon juice

1 tbsp maple syrup

1 tbsp grain mustard

Salt & Pepper to taste

Directions:

  1. Add all your dressing ingredients to the bottom of a large bowl.
  2. Pour all your kale into the bowl and massage in that dressing with your hands.
  3. Keep massaging until the kale is well coated and soft. It will shrink in size too. You will have leftover dressing in the bowl, that’s okay.
  4. Add in the rest of your salad ingredients and mix well. Serve and enjoy immediately.
