Sausage & Pepper Gnocchi

Sausage & Pepper Gnocchi

Ingredients:

2 Bell Peppers

2 Plant-based Italian Sausages (I used these)

1/2 Purple Onion

1 Bag Cauliflower Gnocchi

Red Pepper & Tomato Vinaigrette:

2 Tbsp Extra Virgin Olive Oil

2 Tbsp Red Wine Vinegar

1 Tbsp Italian Hot Calabrian Pepper Sauce (This one is my fave)

1 Tbsp Marinara Sauce

1/2 Tsp Garlic Powder

1/2 Tsp Dried Oregano

1/2 tsp Dried Basil

Pinch Crushed Red Pepper

Serve with:

Grated Parmesan – optional

  1. Line a baking tray with parchment paper & preheat oven to 450 degrees F.
  2. Cut sausages on a diagonal, slice bell peppers and onion into even strips.
  3. Spread frozen gnocchi, vegan sausage, bell peppers, and onions evenly on the baking tray
  4. Spray evenly with olive oil and place in oven for 30 – 45 minutes, tossing halfway through
  5. While that bakes, mix the vinaigrette ingredients well and set aside.
  6. Once the gnocchi mixture is golden, crispy, and cooked through – serve over a bed of arugula and drizzle with dressing and top with Parmesan.

Today was my first “recipe creating, testing, shooting” day in a long time and it was a blast! I really hope you love this one. I’ve had it in my notes for a while and even bought peppers twice because I lagged on finally making this and the first batch of peppers had to be eaten. I’m so happy it finally came to fruition today. It did not disappoint. The hot pepper sauce was a last minute add and I am so happy I did it. It’s tangy, salty, spicy, and smooth because of the olive oil. Reminds me of a a big fat Sausage & Pepper Hoagie but fancier and more delicate. Could serve this at a dinner party or a BBQ and everyone will be pleased. I had it for lunch on a Tuesday and I already know that’s the peak of my week.

Double or Triple this recipe if you have lots of mouths to feed. Leave off the dressing & give them a side of ketchup if serving to the picky kiddos. 

Anyway, were off for an adults only trip to Vegas this weekend and I’m very excited to say the least! I always say my two favorite things are being with my kids and not being with my kids. You feel me?! 😉
