Orzo al Limone

Trigger Warning: Nothing about this is traditional. Except the lemon zest. Maybe.

Orzo al Limone

1 cup dry Orzo Pasta

2 cups broccoli

2 tbsp Lemon Zest

Juice of 1 large lemon

1/4 cup grated parmesan cheese ++

1/2 cup full fat Greek Yogurt

1 tbsp extra virgin olive oil

Salt & Pepper to taste

1/2 cup reserved pasta water

Fresh Basil to taste

  1. Bring a large pot of salted water to a boil and add your Orzo. Cook according to package instructions. Drain well and set aside – reserving 1/2 cup of the starchy pasta water.
  2. While your Orzo is cooking on the stove, prepare ingredients: Chop broccoli into small florets and add to a bowl along with your lemon zest, lemon juice, greek yogurt, olive oil, parmesan cheese, salt & pepper.
  3. Finally, add orzo to the large bowl and mix well stirring in the pasta water as needed to thin out the sauce.
  4. Top with more lemon zest and fresh basil and enjoy Hot or Cold.

Success! You're on the list.

By the time you’re reading this I’ll be a whole year older. Isn’t that weird. This year I get a fun date night with hubby, a birthday morning work out, a solo shopping day, and a family of 4 dinner at our favorite Italian restaurant. I wouldn’t ask for anything more. Absolute perfection and I cant wait!
