Fall Panzanella

Ingredients:

2 cups diced butternut squash

1 medium apple – diced

2 cups arugula

4 slices of pumpernickel sourdough – diced

1/4 cup goat cheese

1/3 cup sliced almonds

Dressing:

1/4 cup Extra Virgin Olive Oil

1/4 cup Apple Cider Vinegar

1 tbsp Honey

Salt & Pepper

Directions:

  1. Spread you butternut squash out evenly on a large baking tray, spray with Olive oil, season with salt & pepper. Bake in the oven at 425 for 15 minutes.
  2. While the Butternut Squash is baking, prepare all your other ingredients and mix together your salad dressing. Set asside.
  3. Once your squash is mostly cooked through and has a nice golden brown color, move it over to one side of baking tray. Arrange your bread along the other side and spray with more olive oil. Place back in the oven for about 10 minutes watching it closely so your bread doesn’t burn.
  4. Once your bread is toasted and crunchy, assemble your salad. You can assemble this all at once or store it meal prep style and throw it together one serving at a time.

I almost cannot believe how amazing this one turned out. I loved it so much I couldn’t stop eating it. Originally, I wanted to make this with a nice seedy grain bread (Like Ezekiel bread) but I found this Pumpernickel sourdough at the grocery store and I could not resist. Pumpernickel is my favorite type of bread and it just screams fall to me. I loved this paired with the goat cheese but you could omit the cheese all together or try it with Feta, Blue cheese, Brie, ahhh the possibilities are endless. As usual, I took help from the grocery store and bought pre-cut butternut squash which honestly saved me like 20 minutes of prep work but you do you! Any stale bread or even croutons would work here.

On a personal note, I am having such a good time in this season of life. Blogging, working out, spending time with my toddlers, enjoying the town I live in. All of it has been so great and I just want to have written record of this being one of the happiest times in my life. There, it’s official. Xoxo!
