Fall Mode: Activated!!
Ingredients: 2 cups diced butternut squash 1 medium apple – diced 2 cups arugula 4 slices of pumpernickel sourdough – diced 1/4 cup goat cheese 1/3 cup sliced almonds Dressing: 1/4 cup Extra Virgin Olive Oil 1/4 cup Apple Cider Vinegar 1 tbsp Honey Salt & Pepper Directions: I almost cannot believe how amazing this one turned out. I loved it so much I couldn’t stop eating it. Originally, I wanted to make this with a nice seedy grain bread (Like Ezekiel bread) but I found this Pumpernickel sourdough at the grocery store and I could not resist. Pumpernickel is my favorite type of bread and it just screams fall to me. I loved this paired with the goat cheese but you could omit the cheese all together or try it with Feta, Blue cheese, Brie, ahhh the possibilities are endless. As usual, I took help from the grocery store and bought pre-cut butternut squash which honestly saved me like 20 minutes of prep work but you do you! Any stale bread or even croutons would work here. On a personal note, I am having such a good time in this season of life. Blogging, working out, spending time with my toddlers, enjoying the town I live in.
