Rainbow Crispy Rice & Sesame Salad

Any recipe that calls for using up last week’s veggies is a great one in my book!

Rainbow Crispy Rice & Sesame Salad

Ingredients:

2 cups cooked jasmine rice

1 zucchini – shredded

1 cup shredded carrots

1 cup shredded purple cabbage

2 tbsp soy sauce

Avocado Oil Spray

Sesame Salad:

1 cup cherry tomatoes

1 avocado

1 Persian cucumber

3 scallions

1 tbsp sesame seeds

1 tbsp coconut aminos

1 tbsp rice vinegar

1 tbsp sesame oil

  1. In a large bowl mix rice and vegetables well. Add soy sauce. Mix again.
  2. Spay avocado oil evenly to the bottom of a small sauté pan and bring to a medium heat. Add 1/2 rice mixture and press down flat until you hear a sear on the bottom.
  3. Cover and cook on medium for 3 – 5 minutes.
  4. While the rice cooks, mix the sesame salad ingredients in a bowl and set asside.
  5. Once the rice is warmed through and you see the edges browning, flip onto a plate. Repeat steps 1 – 3 with the rest of the rice mixture.
  6. Top your crispy rice with half the sesame salad, sprinkle more sesame seeds on top & enjoy!

Note: This recipe would be fantastic with the addition of edamame, tofu, fried egg, or protein of your choice.

In other news, we’re gearing up for Hannah’s birthday party this weekend. I cannot believe that in less than a week my little baby will be 4 years old. I don’t want to seem cliché but how did she grow so fast? I am just so proud of my girl so I’m going to take a second and rave about her below. Feel free to skip ahead…

She is so wise. Like seriously beyond her years. I was telling Jacob the other day that I can’t believe she’s 4, not because that seems so old but because she is so much than 4. She knows how to write her name, her brothers name, and my name! She asks the smartest questions. She thinks deeply and recites her dreams to me. She adores her little brother and protects & guides him even when she thinks no one is watching. She is confident AF too! Not afraid to talk to other kids. Loves to be the center of attention. Loves to make her friends laugh. Oh and she’s so spicy! Like do not cross her or else. 4 years in and she still gives me so much anxiety LOL I’m afraid that might never change.

Last night, she was watching The Lion King (for the 10th time) and cried actual tears. Not when Mufasa died. But later in the movie, when Simba comes back and reunites with the kingdom and sees it in ruins. She felt that part. And she announced that she was feeling it. My heart exploded with pride for my little lioness girl. I cant wait to see what amazing things she will do in her life. I feel so lucky to be a part of her kingdom.
