Tangy Tamarind Veggie Dumplings

Oops, I made my new favorite lunch by accident because I was in a rush.

I have to note: Every Single Ingredient was Purchased at Trader Joe’s. They’re the best. I dont make the rules.

Tangy Tamarind Veggie Dumplings

Ingredients:

1 bag frozen Vegetable Dumplings

3 cups Frozen Edamame (shelled)

2 cups Purple Cabbage (sliced thin)

1/3 cup water

1 tbsp Avocado Oil (spray works great too)

3 tbsp Tamarind Sauce

3 tbsp Coconut Aminos

1 tbsp Chili Sesame Oil

Directions:

  1. In a large skillet or walk, evenly spray cooking oil of choice and turn heat to medium high.
  2. Add frozen vegetable dumplings and cover. Flip over after a few minutes to crisp the other side.
  3. Once the dumplings are golden brown remove lid and add water, edamame, and cabbage. Cover quickly to steam for about 1 minute.
  4. Remove lid and add Tamarind Sauce, Coconut Aminos, & Chili Oil. Stir well and cook down for another 30 seconds – 1 minute.
  5. Serve immediately and enjoy!
  6. Optional – Sprinkle on Sesame Seeds + Mint and more chili oil if desired.

We just got back from Vegas and not feeling totally ourselves yet. We took the kids out to eat as soon as we got back and I LEFT MY PHONE IN THE RESTAURANT! I’m telling you, so NOT myself. I didn’t even realize it until we were practically home. Who is SHE?! Luckily the restaurant held onto it for me and I was able to go back and pick it up the next day (along with a very very cute little early birthday gift for myself – more on that later). I wanted to get to the restaurant as soon as they opened and needed a quick throw together meal and this was it. I’ll be eating this all week now and so will you!
