Zoodles. Zucchini disguised as noodles…
Hmmm, I never really knew how I felt about these. On the one hand it’s basically a zero calorie – full of nutrients – spaghetti option. On the other hand, let’s be honest, it’s not spaghetti!

What’s a girl to do when she’s trying to watch her carbs but all she can think about is Thai Food. Well there are several options, including “screw the diet, treat yo’self” but last night I chose the low road, low carb that is. I made this delicious Pineapple Fried Rice using a nice mix of Cauliflower Rice + Quinoa and I’m so glad I did. This dish was delish! Everyone enjoyed it so much and nobody felt like they were lacking on anything. So let’s get healthy, let’s get to it, let’s get cooking!

I know it might be hard to believe but I made a creamy, rich Alfredo sauce last night using practically nothing but cauliflower!!! I know. I know. I didn’t believe it was possible either. That’s why this post is lacking any pictures. The whole time I was making it I was thinking, “What time does Subway close? We’re gonna need to pick up dinner. This is never going to work. It’s okay I’ll make avocado toast” And then, boom I mixed it with my pasta and WOW it not only worked, it was a DREAM COME TRUE! Guilt free, dairy free, Alfredo Sauce!? FEED ME!!
Let’s just get to it because you need to make this to actually believe me.
Oh Oh, the best part of this fab pasta dish is that it only took 1 pot to make! Plus a food processor/blender. No mess, no problem!

Cauliflower is the new kale and I’m not mad even one bit about it! I’ve been sick with a very annoying sore throat for a few days now and I needed all the vitamin C I could get. Since cauliflower is jam packed with vitamin C it was the perfect time to make these Cauliflower Power Steaks! I served them with a side of zoodles in pink sauce. Since I basically haven’t moved a muscle in 4 days I needed to say goodbye to my BFF, Mr. Carbs, for tonight.
Cauliflower is a powerful food and loaded with Vitamin C, omega-3s, potassium, Vitamin B, full of folate and dietary fiber, and the list goes on and on! Get cooking with cauliflower before it’s yesterday’s news like our old friend Kale. Just kidding, Kale, we still love you!
