This is not exactly a recipe just more of a little photo inspiration. Last night I noticed I had tons of veggies lying around in all corners of my kitchen. I decided that for dinner I would just have a ROAST FEST and cook em all up. As I was roasting away I started thinking, “how the heck am I going to bring this all together?” And then I remembered the GIANT white bowl I bought and decided to make it a Happiness Bowl. I know right??

What a discovery! What a way to cook! And what a fabulous way to eat! This is seriously my new go to for weeknight meals. It was simple, nutritious, and of course very delicious! We are big on sauces at my house so I whipped out 3 or 4 of our faves and we went to town on this bowl. It was super fun tasting everything and pairing with the different dressings (or no dressing) to see what went well with what. This is the answer to the indecisive eater. Like, you know when you go to a *vegan* restaurant and you get so excited and want to order EVERYTHING on the menu?! We did that last night. It was dreamy. It made me very Happy. I’m still smiling. & You should try it too!

So here is what I made from tomatoes to potatoes:
No-Cheese Caprese
Roasted Butternut Squash
Crispy Brussels Sprouts
Za’atar Fried Eggplant
Crispy Lemon Kale
Oil-Free French Fries (THANK YOU, PARCHMENT PAPER)
