No matter how you feel about fruit in your salads, I guarantee you’re gonna feel all the feels about this one…
I asked my Instagram BFFs to let me know if they like fruit in their salads or not and I realized there are 2 types of people in this world. The ones that do and the ones that definitely do not. So, despite the fact that about 50% of the responses were “hell no, fruit doesn’t belong in my salads”, one of my favorite girls said she loves it so I had to go for it. Don’t worry you guys, my husband says I never listen to him either. LOL.
But trust me on this one okay, THIS salad is a field of dreams and I guarantee even the most anti-fruit in salad friends are going to love this. Ahem, like my hubby who devoured half of this the next day at work…
Pro-Tip, if you want to make this way ahead of time and serve in the next couple days, stop at the step below and add your strawberries + almonds just before plating. This will ensure the freshest flavor and texture. No soggy fruit here.
Look at that beauty. Doesn’t it scream summer! The best things about this recipe are, 1. No cooking required. and 2. because of the garbanzo beans you’ll actually feel full after eating this, which means it’s truly an entree salad and perfect for hot summer days.
Kale Strawberry Field Salad
Ingredients:
4 cups dino kale – chopped
1 cup strawberries
1 – 15 oz can of Garbonzo Beans
1 cup broccoli – chopped
1/2 cup slivered almonds
1 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
Salt & Pepper to taste
Directions:
- Prepare all your ingredients. Chop Kale into small pieces, dice cucumbers, chop broccoli, slice strawberries. Rinse & Drain a can of chickpeas. Remove the almonds from the pantry.
- In a large bowl mix kale with salt, pepper, EVOO, and balsamic vinegar. Give it a good massage. This will make the kale bright green and shiny and also more chewable and less tough.
- Next add your chickpeas, broccoli, and cucumber and give that a good mix. Taste for seasoning…
- Finally top with your strawberries & crunchy almonds. Add avocado – optional but always recommended.
And Enjoy it Veganly Much!
This will keep in the fridge for 2 or 3 days without adding the strawberries. Once you add those I recommend eating this within 24 hours for best results.
