What I Ate Wednesday on Instagram

Welcome to What I Ate Wednesday straight from my Instagram Stories!

I share everything I eat every single Wednesday in hopes that you will find some foodie inspo or just to show how much variety I find with eating plant-based foods. Sometimes it’s healthy, sometimes it’s junk food – but it’s always delicious and always vegan. This week I wanted to show you  the raw footage from my WIAW Insta Story last week. It was a yummy yum day!


I always begin my day with a cup of coffee. And almost always add cinnamon + soy milk. This day was no different.










I don’t always talk about this but it’s super important to mention how much water I drink everyday. I always have an entire 750 ml bottle of H2O right after my coffee and sip another 1 – 1.5 throughout the day. I then fill up and finish another bottle at night after dinner. If I have a workout that day, well then you can pretty much just add a 4th liter. This isn’t so easy to do in the colder months because we don’t feel as dehydrated as we do in the summer but it’s every bit as necessary! I love Icelandic water because of it’s high PH level (8.4) & these gorgeous glass bottles, obvi.





On this particular Wednesday I had a very special breakfast planned for myself from the day before. I made myself an Exotic Fruit & Vegan Yogurt Parfait the night before and stored it away so I had something to look forward to. Listen, I don’t even like fruit & yogurt parfaits but this was one of the most delicious things I’ve had all month. I used a fresh mango, a dragon fruit, Kite Hill Plain Almond Milk Yogurt, Bob’s Red Mill Muesli, and some fresh walnuts to layer this up in my mason jar. Magnificent!






Ah, the joys of working with persian girls. My sweet co-worker brought in some Gojeh Sabz and I was swooning over them while everyone else was just trying to figure out what they were. So happy she was willing to share with the entire floor because these are VERY special fruits!!








I popped over to Trader Joe’s on my lunchbreak because I need to pick up a few veggies for our epic dinner salads and I grabbed one of these wraps. Honestly they aren’t the best but that sauce is delish and these are a perfect quick office desk lunch. Gotta love that V!








Dinner time finally rolled around and I got a little too excited. These salads are so jam packed with plant-based goodness that you’d never believe there wasn’t a single animal harmed in the making of your dinner. I used Gardein Chick’n Scallopini to top my veggies and toasted up a Flat Out flatbread to go with. As a dressing I have been LOVING just mashing up an avocado with lemon juice, nooch, and a touch of tahini then mixing that around to coat the veggies. It’s so delicious and makes me feel full without feeling heavy. I am loving eating giant salads for dinner lately and this one was definitely one of my all time favorites.





What I ate Wednesdays are never complete without a delicious little dessert treat before bed and these little chocolates I got at Expo West were just perfect! I wish I would’ve snagged some more. I’ll be on the lookout for Prana Organic chocolates on my next grocery shop, that’s for damn sure!!
