I wanted to take a moment and share with you some of the delicious things I eat on a typical day when I’ve meal prepped everything the day before.
I am so excited to share with you all of these things I ate on a day where I meal-prepped the day before. It was so easy to stay full and satisfied all day long with just a few minutes in the AM and a few leftovers from the day before.
Per usual every day starts with a cup of coffee. No prep really necessary. I just pop in the Keurig and 30 seconds later I have fresh brewed coffee.
I cut up half of a fresh juicy seedless watermelon the night before and put it in this tupperware to take with me to work. It was such a delicious breakfast. Very hydrating. Easy to eat at my desk. And filled me up for a good few hours.
Just before lunch I had myself a little Vega Protein + Greens Vanilla Protein Shake. This helps me get fuller faster and keeps me going throughout the day. I always know I’m getting enough protein when I have some of this stuff in my shaker bottle. Plus, it tastes like a milkshake. All I did was add a scoop to my shaker bottle in the morning then fill it up with half soy milk & half water when I was ready for it at work.
I gave myself 10 minutes the night before to plan out this epic lunch salad and prepped it all in my Bentgo Salad Box. The beauty of this salad box is that it keeps all your ingredients separate so nothing has to get soggy before you’re ready to eat. I am always looking forward to a lunch break when I have something this epic waiting for me in the office fridge. p.s. My coworkers always seem impressed too.
A little homemade trail mix is the secret to a productive day. I’m telling you. Fill up about a cups worth of your favorite nuts and dried fruits and always have it on hand for those HANGRY moment and you’ll be thanking me. I love using cashews, walnuts, hazelnuts, dried cranberries, and Bare Snacks Coconut Chips. This was a must to keep me going all afternoon.
Dinner was amazing as usual. I made a HUGE double serving of these TOFU TERIYAKI NOODLE BOWLS & MAPLE TAHINI DRESSING so we were able to reheat this up in a pan for dinner and enjoy it 2 nights in a row. Honestly, it was even better the second night.
