Beyonce once said it best… “Watermelon.”
That’s all she ever needed to say and we all got her. There was an understanding. Watermelon. Yes, Beyonce, yes. That’s exactly right! Watermelon.
So here’s the story. I was in desperate need of something quick, delicious, beautiful, and healthy and immediately I thought about Beyonce’s famous “lyrics” – ie: WATERMELON to the rescue.
This salad is big dreams becoming realities. It’s so tasty yet healthy that you could just gobble it up right out of the tupperware standing next to the fridge. But it’s also just so absolutely stunning that you could serve it up to the highest guests of honor and feel ridiculously proud of yourself for your elite hosting skills. And the cherry on top? It takes less than 10 minutes to whip up to perfection!
Let’s go, I’m salivating!!!
Cucumber Watermelon Salad
Ingredients:
1 seedless watermelon
4 Persian cucumbers
10 mint leaves
1 lemon
1 tbsp Tajin (citrus chili powder)
1 tbsp coconut sugar
Directions:
1. Cut cucumber and watermelon into even sized cubes and pieces.
2. Mix together lemon juice, Tajin, & coconut sugar.
3. Plate cucumber and watermelon and pour dressing over top just before serving.
4. Garnish with mint leaves.

p.s. feel free to take any leftovers of this salad and throw it in a blender, add vodka, pour it in a fancy glass, sit back, take a sip, and listen to some (Beyonce) music! So versatile!
