Avocado & Lemon Pesto Pizza

I really never thought this day would come. But it’s here. My family & friends are going to be shocked. And I couldn’t be more ecstatic to share the news with all of you!

Here it goes…

I LOVE CHEESE-LESS PIZZA!!

Yup that’s right! I put it in writing so it’s officially a fact! This pizza was both decadent and light. It was rich with flavor but not too heavy. I actually felt healthy eating it and I also felt full which is no easy task. It’s perfect for breakfast, lunch, or dinner. Can be served warm or cold. Can be shared or devoured alone. Perfect in any which way you make it, just definitely make sure you make it!

Avocado Pesto Pizza

  • Servings: 2 – 4

IMG_8220Ingredients:

1 ripe avocado

5 pearl tomatoes

1 whole wheat pizza dough

Basil

Olive oil

Crushed red pepper

Lemon Pesto:

1 lemon

1/4 cup Nooch

1/2 avocado

A few handfuls basil

1/4 cup sunflower seeds

1/3 cup olive oil

A few pinches sea salt

A few pinches black pepper

Water

Directions:

1. Preheat oven to 425 degrees & line baking sheet with parchment paper
2. Roll out pizza dough on parchment paper & drizzle with good extra virgin olive oil.
3. Cut tomatoes into quarters and spread evenly on pizza dough. Sprinkle with sea salt.  Bake for 8 – 10 minutes
4. While your pizza is baking, throw all pesto ingredients in a food processor and blend until smooth. Add water as needed to make it more of a sauce texture.
5. Remove pizza from oven and pour pesto sauce all over in a circular motion. Add sliced avocado & more basil. Sprinkle with crushed red pepper and enjoy!
