Curry Chickpea Salad

Is there anything that a Chickpea CAN’T do?? If there is, I still haven’t found it. Lately Chickpeas have been my everything. I used to order this amazing Curry Chicken Salad Sandwich at one of my favorite little cafes and since I stopped eating meat I have craved this deliciousness on more than a few occassions. So of course my trusty sidekick, The Chickpea, came to the rescue and gave me back that amazing sandwich. I swear it tastes even better this way. Let’s get Curried away!

1 can chickpeas (drained & rinsed)
1 tablespsoon vegan mayo (you can sub 1 tablespoon olive oil if you dont have vegan mayo)
1 tsp or more curry powder
a few sprinkles cinnamon
Salt & Pepper
A drizzle of Honey
A handful matchstick carrots
2 tablespoons golden raisins
2 tablespoons raw pumpkin seeds (optional but the crunch is really nice)

1. After you rinse and drain your can of chickpeas, add them to a bowl and mash them up a little bit with a fork. Add 1 tablespoon of vegan mayo and mash a little more.

2. Then add all your seasonings & honey and mix well.

3. Then add your carrots, raisins, & pumpkin seeds and mix well.
4. Taste, add more seasonings if necessary. Make a sandwich. Devour sandwich. Make another sandwich. Recipe is enough for 2 HUGE yummy sandwiches. You can opt to share the second one with someone else. It’s up to you.

**This could also be enjoyed over a bed of greens for a yummy salad option.**
