Vanilla Latte Overnight Oats

Good Morning!! My favorite thing about waking up is BREAKFAST! On most days breakfast is a green juice and a cup of coffee. Coffee was my first love before the green juice came along. And it’s still my greatest love. Sorry, green juice. There is just a special relationship between a coffee drinker and their coffee. We all have our favorite way to make it and our special way to drink it. My special treat is a grande vanilla soy latte. If I’m ordering a beverage at a cafe and I hear they have Almond Milk, I am always all over it! “I’ll take a vanilla almond milk latte, please” And then a very big smile runs accross my face. What a treat!
So that little love story brings me to this lovely recipe! I think I came up with it in my sleep. I’m sure by now we’ve all heard of the magic of the overnight oat. Add all your ingredients the night before, pop it in the fridge, and boom breakfast is ready when you wake up. So being that I am in the marrying spirit these days, I married the overnight oat & the vanilla latte and voila, your PERFECT breakfast awaits!

Ingredients:
1 cup rolled oats
1/2 cup sweetened coffee
1/2 cup almond milk
1 teaspoon vanilla extract
1 tablespoon chia seed
1 tablespoon flax seed meal
1 tablespoon hemp hearts
Sugar – optional
Cinnamon – optional
1. Brew a cup of coffee or use what you have leftover in the pot from the morning. I used an Iced Coffee K-Cup from Starbucks. It’s my favorite because it tastes great cold & it has sugar in it so I didnt need to add anymore. If your coffee doesnt have sugar in it you might want to mix in a tablespoon of your favorite sweetener, raw sugar, splenda, honey, stevia, or plain old white!
2. Pour half a cup of sweetened coffee into a mason jar. Add a cup of rolled oats.
3. Add a tablespoon of Chia Seeds. Oh yeah baby!
4. Add a tablespoon of Hemp Hearts. Just get’s better and better!

5. Add a tablespoon of flax seed meal. Yummo!
6. Now add your almond milk or soy milk or coconut milk or cashew milk or hemp milk or rice milk. I added almond milk. “The hardest thing about being Vegan is waking up at 5 am to milk the almonds” (vegan joke, sorry I’ve been waiting a long time to use that one)
7. Finally add a teaspoon of vanilla extract and an optional little sprinkle of cinnamon. I always add cinnamon to my coffee at work because I stopped using splenda/sugar and it really helps to bring my coffee to life. So I did the same here. You dont have to but I highly recommend it.
 8. Finally, close the lid and give this a good shake to get everything mixed together.
That’s it! Pop it in the fridge and I hope your sweetest breakfast dreams come true!
Note: You can also pop this in the microwave for a few seconds and enjoy it warm
