Cauliflower Power Steaks

Cauliflower is the new kale and I’m not mad even one bit about it! I’ve been sick with a very annoying sore throat for a few days now and I needed all the vitamin C I could get. Since cauliflower is jam packed with vitamin C it was the perfect time to make these Cauliflower Power Steaks! I served them with a side of zoodles in pink sauce. Since I basically haven’t moved a muscle in 4 days I needed to say goodbye to my BFF, Mr. Carbs, for tonight.
Cauliflower is a powerful food and loaded with Vitamin C, omega-3s, potassium, Vitamin B, full of folate and dietary fiber, and the list goes on and on! Get cooking with cauliflower before it’s yesterday’s news like our old friend Kale. Just kidding, Kale, we still love you!

Ingredients:
1 head of cauliflower
2 tablespoons vegan butter/margarine
2 tablespoons olive oil
1/2 lemon
1 tablespoon crushed garlic
Oregano
Thyme
Cayenne pepper
Turmeric
Smoked Paprika
Onion Powder

1. Take the whole head of cauliflower and slice 1 inch thick steak-like pieces. It’s okay if some pieces break off, those will be delicious too. By keeping the core in tact the florets should stay together.2. Preheat oven to 375.

3. Line baking sheet with parchment paper or aluminum foil and place your cauliflower steaks in a single layer.

4. In a saucepan heat olive oil and vegan butter. The combo is perfection but you can use whatever you have on hand. Add crushed garlic and stir. Mix in all your seasonings and squeeze in your lemon. Mix well until the butter turns a nice brownish-orange color. The turmeric helps give these cauliflower steaks a beautiful yellow/orange color that I love. It’s also a great natural anti inflammatory . If you’re not a fan you can skip this ingredient but I don’t condone it.

5. Once your marinate is ready simply brush/slather it all over you cauliflower on both sides. Add a little salt & pepper on top. Let that sit for a few minutes and really soak in while your oven is preheating.

6. Bake for 15-20 minutes, maybe a few extra minutes if you like it crispier.

Voila! The Cauliflower Power Steaks are ready! These are great served with zoodles like pictured but you can also serve them with mashed potatoes, brown rice, couscous, quinoa or any other starch of your choice. Have fun with it! Get well, VEGANLY soon!
