It doesn’t get any easier than this and I mean it this time! I’ve been wanting to do something fun with popcorn for a while now and this morning I was watching The Food Network and Giada made something just like this. I veganized it and changed a few ingredients because I wasn’t paying attention to exactly what she put in the paste. I wish I could tell you it took 5 mins, I actually think it was more like 4… And oh my wow, it was SO good!!
Ingredients:
Unsalted/Unbuttered Microwave Popcorn
3 tablespoons sun dried tomatoes with oil
2 tablespoons olive oil
1/2 teaspoon crushed garlic
1/2 a fresh lemon
Salt & Pepper
Dry Oregano
Nutritional Yeast – optional
Step 1: in a food processor pulse SDT, olive oil, garlic, & lemon. Add salt & pepper to taste. Scrape the sides to make sure everything is blended into a paste
Step 2: microwave popcorn.
Step 3: pour the paste & popcorn in a bowl and mix well and mix gently with a spoon until all the popcorn is coated.
Step 4: Sprinkle on lots of oregano and nutritional yeast/ or Parmesan cheese (I won’t judge, maybe a little, j/k) & ENJOY IT VEGANLY MUCH!
