Almost Vegan Salted Peanut Butter Chocolate Blondies

Yes, that’s what they’re called because that’s exactly what they are. And they’re outstanding!!!

I say almost vegan because if I had vegan chocolate in the house they would actually BE vegan + gluten free, flour free, and guilt free! But all I had was a Toblerone in the fridge so that’s what I used. And I don’t regret it.

The secret ingredient here is CHICKPEAS! Crazy right?!? I know!! Who would’ve thought chickpeas could be so magical??! Pinterest knows so much!!!

Ok, here you go! Get ready to impress all your picky, celiac, kosher, vegan, dieting, friends! They can’t say no to these… Unless they’re allergic to peanuts… Hmm… then we’ll have to figure out some other substitute. Ugh, I guess the quote is right. “You can’t please everyone, you’re not a jar of Nutella.”

Moving on… Here’s what you you’ll need:

Ingredients:
1 (15oz) Can of Chickpeas – rinsed and drained
1/2 Cup Peanut Butter or Almond Butter
1/3 Cup Maple Syrup or Agave Nectar
2 Teaspoons Vanilla Extract
1/2 Teaspoon Kosher Salt
1/4 Teaspoon Baking Powder
1/4 Teaspoon Baking Soda
1/3 Cup Chocolate (your choice!)
Sea Salt for sprinkling at the end

Directions:
I forgot to tell you the coolest part! I made this using my NUTRIBULLET! Ah! I don’t have a food processor, so if you have one use that. But my trusty NUTRIBULLET never fails.

Preheat your oven to 350 degrees

Blend everything except the chocolate in your food processor/NUTRIBULLET

Fold in your chocolate. {Vegan chocolate, dark chocolate, chocolate chips… Whatever you want. No judgment!}

Lightly spray your baking dish/Pyrex with the coconut oil spray or cooking spray

Evenly spread your batter

Pop in the oven for 20 – 25 minutes

Do the toothpick test make sure it comes out clean

Let cool (this was the HARDEST part!)

Sprinkle on some sea salt

Cut into squares

And start bragging about the coolest thing you ever made!!! Or is that just me…. πŸ˜‰
