What I eat in a Day – Vegan in Real Life
Sometimes people think that vegan food is colorful bowls of farmers market vegetables & organic gluten-free ancient grains; drizzled with homemade saffron tahini sauces and sprinkled with unicorn fairy dust… and sometimes it is. But most of the time, like 99.9% of the time, Vegan Food is just Food.
Today, I’m going to do my best to show you what I eat in a day as a real life vegan, out in the wild if you will…
[8:00am] I started my day the way I always do, a giant cup of coffee + emails. I ran out of my favorite coconut creamer from Trader Joes so I just used some unsweetened almond milk. I brew my coffee in a Keurig when I’m at home and usually like to put a sprinkle of cinnamon on top but on this day I needed to get the caffeine into my bloodstream as soon as possible. No time for Dilly Dallying.
[11:00am] I swear I did not leave the front of that laptop for 3 hours straight. I did drink a ton of water while I was working away though. By 11am I was starving for lunch. I dug into my fridge and found some leftover Caulifredo Sauce Pasta. 12 Days Leftover, I might add. And I did. I added some almond milk, more nooch, fresh broccoli, kale, & jalapenos – reheated it all up in a pan and devoured the entire thing for an early lunch. p.s. Didn’t die so I can confirm that Caulifredo Sauce will last up to 12 days in the fridge. 13 days I cant guarantee.[1:00 pm] At 1pm I had an appointment, an errand to run, and a meeting for work so I knew I’d be out of the house for the next few hours. Even though I wasn’t quite hungry yet from my huge lunch I knew I wouldn’t survive out in the wild for the next 3 hours without eating something. I grabbed my FAVORITE protein shake of all time, keys, work phone, and water (not pictured) and set out. These Vega Protein+ Shakes are only 170 calories, but pack 20 grams of plant-based protein. They taste like chocolate milkshakes and satisfy me enough so that I can be a nice person for a few hours in between meals. I love them.[4:30 pm] I was finally home and had a few hours to kill before dinner so I cracked open the most delicious YELLOW WATERMELON IN ALL THE LAND and ate about half of it standing up in the kitchen. I cant believe Trader Joe’s is selling these precious babes for only $2.99 all summer long. I feel like someone needs to be fired for this or promoted for this. I cant tell but I love YELLOW WATERMELON!!! + I love Trader Joe’s.[7:00pm] We set out for dinner + a long walk. Our favorite way to end a long week. They finally opened the Omakase style sushi restaurant across the street from our place and they even had a Vegetarian Omakase on the menu! It was so divine. I couldn’t take pictures because it was a little too quiet, open, cold, and white in the restaurant for me to be flashing my food bloggy iphone at every plate but OMG take my word for it. My omni hubby even said my vegetarian dishes were better than his fishy ones. 10/10 Would Recommend! The place is called Fatty Tuna in Irvine, CA. In case you wanted to swing by and try for yourself.
