These are so good you’ll think you’ve gone mad!!!

There are certain things in life that happen purely to test your limits. These cookies are it for me. Not only are they INSANE because of the ingredients I used but I had to recipe test these THREE times before getting them perfect enough to share with all of you. Talk about knowing your limits, I now know mine… and they’re basically limitless!

Yes, that’s right those are salty Lays potato chips, and dried cranberries, and oreo cookies, and basically anything else your heart desires to stick inside a chocolate chip cookie. Let’s be real, if your cookies are boring your life is probably boring too, and nobody wants that. So, live a little!!

Try these CRAZY add ons in your CRAZY cookies!

Pretzels, Peanut Butter Chips, Walnuts, Almonds, Coconut Shreds, Rice Krispies, Rainbow Sprinkles, Dried Fruits, and so much more!

The craziest thing about this cookies is NOT what’s in them though. It’s what they’re made of. CHICKPEAS!!! I know you don’t believe me but we’ve been through this before and I’ve told you that when you go vegan you are basically going to become a magician because things actually start to turn into other things and these cookies are the perfect example. The most important step is that you MUST pulse your chickpeas FIRST and get them completely smooth before adding your other ingredients. I am not exactly sure why but this was the secret step to getting these cookies perfect.

1st, chickpeas, then oil flour sugar…, then CRAZY add ons. Got it? Good. Let’s BAKE baby!!

Crazy Chickpea Chocolate Chip Cookies

Ingredients:

1 can garbanzo beans drained and rinsed
½ cup quick cooking oats
¾ cup cane sugar
4 tablespoons melted coconut oil
1 tsp vanilla extract
½ teaspoon himelayan sea salt
½ teaspoon baking soda
1 teaspoon raw apple cider vinegar

My Crazy add ons:

1/2 cup dark chocolate chips
1/2 cup dried cranberries
1/2 cup crushed potato chips
1/2 cup walnuts
1/4 cup rainbow sprinkles

Directions:
1. In a large food processor, blend oats until they are fine like a flour but not completely pulsed. Remove from food processor and set asside.
2. Add chickpeas to the food processor and blend until completely smooth.
3. Add sugar and vanilla extract, blend again.
4. Add oat flour, baking soda, & apple cyder vinegar, and salt. Blend again until all combined.
5. Next add all your CRAZY add ons and pulse a few times to distribute.
6. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
7. Add a tablespoon full of batter to the baking sheet and leave room in between each cookie as these will spread out.
8. Bake for 20 – 25 minutes (mine took 23) allow to cool for at least 20 minutes before eating the entire tray.
Enjoy it veganly much!
P.S. Don’t tell anyone what they’re made of until AFTER they’ve tasted them. Or don’t tell them at all because they wont believe you anyway…
Note: Use Gluten-Free Oats to make these gluten-free
Note: Store these in the fridge for best texture 
Most Important Note: Let these COOL COMPLETELY before digging in. Trust me on that one.
