But sometimes it is so hot outside that you really need a cool refreshing appetizer/lunch and this is IT!
Beautiful, gorgeous, cooling, healthy, WATERMELON GRAPEFRUIT GAZPACHO. Are you ready to wow your friends at the next pool party or summer brunch? Come to table with this beauty and watch everyone get all googly-eyed over it!
Watermelon Grapefruit Gazpacho
Ingredients:
2 cups seedless watermelon – cut
1 large red grapefruit
1 cup frozen pineapple cubes
1 tbsp sugar
1 pinch sea salt
Fresh Arugula
Roasted Pistachio pieces
Tajin – optional
Directions:
- In a food processor, pulse together all ingredients except arugula and pistachios.Pulse a few times to blend ingredients while keeping some visible chunks of fruit.
- Pour into cute bowls or use the grapefruit shells if you wanna get fancy.
- Top with fresh arugula and pistachio pieces and more sea salt/Tajin. Serve with a spoon.
