Hasta La Pasta

Ok can we just admit that a bowl of Spaghetti is exactly the same thing as a warm hug?!
Here is my rendition of VEGAN Spaghetti alla Bolognese! Second best to the flavor & acceptance you’ll receive from this bowl of pasta comes the fact that it’s high protein, low carb, low cholesterol, and low fat… which translates to; EAT 2 BOWLS!

Ingredients:
1 package of whole wheat spaghetti (you can also use half zucchini noodles and BOOM you just won yourself an extra bowl of joy!)
1 jar of your favorite Marinara sauce (I know , I know all you real chef’s out there are thinking “marinara in a JAR? WTF?!” Don’t worry! We’re gonna zest it up!
1 package of your favorite Meatless Meat (I like to use Trader Joe’s Beef-less Beef, but Lite-Life also makes a great vegan ground beef. Use whatever you can find/like)
Seasonings: (see I told you’d we’d zest it up!)
Olive Oil
Salt
Cayenne Pepper
Lemon Pepper
Onion Powder
Garlic Powder
Dry Oregano
Fresh Basil to garnish…
Step 1: Boil your pasta in plenty of water, salt, and olive oil. This is the trick to making the most flavorful noodles. If you’re using whole wheat pasta you’ll have to cook it a bit longer so it’s a good idea to get this on the stove ASAP.
Step 2: Add your meatless meat to a sauté pan and break it up stirring frequently over medium heat for about 5 minutes) Meatless meat is usually packed in oil so you won’t need to add any to the pan. Especially, if it’s a nonstick pan which it always should be. Add tons of dry oregano to your taste. (this makes it Italian, lol)
Step 3: Drain pasta and return it to the pot. It’s okay if there is some pasta water left, this will give it a great texture. I usually leave 3 – 5 tablespoons.
Step 4: Add the jar of marinara, the meatless meat, and all the seasonings to taste.
Step 5: If you like happiness: Add a few more tablespoons of olive oil to coat the bottom of the pot. Place the lid to cover and simmer over medium low heat for about 10 – 15 minutes. This will create the most delicious crispy crust on the bottom of the pasta and this will be the part that everyone fights over. I promise!
Zucchini Noodles? If you decided to go with 50% zucchini noodles just spiralize your zucchini and toss in the pot with the sauce and meatless meat. The zucchini will heat through with everything else. Enjoy your 3rd bowl, lucky!!
Don’t forget to garnish with basil so you can feel good about yourself for keeping things green… oh and also for the fresh aromatic flavor!
RECIPE UPDATE:  Last night I recreated my FAVORITE pasta recipe using Banza Chickpea Pasta and OH MY WOW! I had to reshare this with you. After following these steps using my new favorite noodles, I put it in a baking dish, covered it with Soy Shredded Cheese and baked it on High Broil in the oven for about 10 minutes. Simply put, it was PERFECTION!
